Savory and a little sweet, white kimchi (백김치) is not spicy and is the perfect palate cleanser side dish, pairing well with both meat and seafood.You can also enjoy the brine in a variety of fun ways. Use the brine as cold noodle naengmyeon broth, add it to sauces and dressings, or drink it as a pickleback with soju and Korean bar snacks (doubles as electrolytes)!

As a Korean adoptee, preserving Korean history and culture often feels important yet heavy, so it was heartening when Kyung-yeon discovered that kimchi-making could be a space for playfulness and fun.Our kimchi balances tradition with creativity, inspired by Kyung-yeon's SoCal roots, her travels across Korea, and a desire to experience and express delight every day!
